Roasted Cauliflower with Anchovies and Mint

Ingredients
  1. 1 T cooking fat (I used ghee)
  2. 1 lb cauliflower (I used the frozen roasted cauliflower from Trader Joe's but you could also use fresh)
  3. 1/2 medium onion
  4. 2-3 carrots
  5. 2-3 fire-roasted sweet peppers (I used the Divina Organics brand)*
  6. 3-4 anchovy fillets
  7. salt and pepper to taste
  8. 1/2 - 1 T of fresh mint, minced
Instructions
  1. Preheat oven at 450 degrees F.
  2. Chop onions, carrots and bell pepper into smaller pieces and add to the food processor. (You can also cut the onions into thin slices so that they get nice and crispy, which I would recommend.)
  3. Heat cooking fat in a medium pan and sauté chopped veggies until soft (about 8-10 minutes)
  4. Place cauliflower on a rimmed baking sheet and sprinkle the veggies on top once they are ready.
  5. Add anchovies on top and bake for 45 minutes, rotating the tray about 20 minutes into cooking.
  6. Remove from the oven and toss with minced fresh mint.
  7. Nom.
Notes
  1. * The Bon Appetit calls for Fresno chilies or jalepenos so this is a great option if you don't have sweet peppers or if you would like a spicier version.
